La Cave de Salers (refiner)

In this barn, you will learn the secrets of one of the oldest cheeses in Auvergne. The visit starts downstairs in the cellar where the cheeses of differing ages are wiped and turned by Dominique who is in charge of the last stages of the maturing process. In a 150m² area, there are about 1 000 cheeses. 10 producers are selected by the Nouaille cheese dairy. Exhibition of photos, film, interactive information, guided or unguided visits to learn more about the Salers cheese production.
