Cantal or Salers? Let's take stock!

Before diving into the tasting, you first need to know what you're tasting! In the Salers region, you'll mainly encounter three distinct types of cheese: Cantal, Salers, and Salers Tradition. Yes, they all come from the same area, but no, they're not the same. And we'll explain why:

Cantal: the great delicacy of Auvergne

Cantal is a pressed, uncooked cheese made from raw or pasteurized cow's milk. It's loved for its slightly buttery or nutty flavor, and people keep coming back for more because it appeals to all tastes.

👉 Cantal cheese is protected under the Protected Designation of Origin (PDO) “Cantal”.

The Cantal special update!

Cantal AOP is evolving its designations and its taste! Until now, it was distinguished by 3 different ripening processes:

  • Young Cantal (aged 30 to 60 days), with its soft, white paste and mild flavor;
  • Mature Cantal (aged 90 to 210 days), with its bumpy rind and robust flavor;
  • Aged Cantal (aged over 240 days), with its crumbly paste and lingering, fruity taste.

It now benefits from 2 different designations depending on its maturation:

  • Aged between 1 and 4 months: this is a young Cantal cheese;
  • Aged between 4 and 9 months: this is a mature Cantal cheese.

The aim of this change? To more clearly showcase all the subtleties of Cantal cheese, and to extend the aging time of Cantal AOP Affiné for greater quality, more flavor, and more intensity. That certainly makes you want to try it!

Salers: the ancestor of Cantal

Salers is a bit like the Cantal of yesteryear and one of the oldest cheeses in Auvergne (yes, really!). It differs from its cousin in that it can only be produced between April 15th and November 15th, when the cows are grazing. It must be made directly on the farm after milking. It is aged for a minimum of three months. Its taste? Fruity, vegetal, and lactic with roasted notes. In short, we love it!

And what about the Salers Tradition, then?

While Salers cheese can be produced from any cow's milk, Salers Tradition is made exclusively from the milk of the Salers cow, the great star of Auvergne!
